Norris's Nuts Return....

Norris's Nuts

Nothing says, "Happy Holidays" like my nuts. Um..yes. I said it. I mean it. My nuts are awesome. They are salty. They are sweet. And yes, they melt in your mouth.
Every year, I treat my coworkers to my sweet nuts. At first, it was just fun to say it (and yes, I still think it is fun to say). However, over the years, I actually get requests for my nuts. People ask, "Norris, are you making your nuts this year?"
So, it is a tradition now. I even make a cute label titled, "Norris's Nuts." Your mouth is watering for my nuts now I am sure.

They are cooking right now. They smell so good.

Norris's Nuts:(the recipe is for a single batch, but I usually double or triple it when I make them)
1 egg white
1 tablespoon water
3/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup sugar 1 lb of nuts (I use all kinds: pecans, mixed nuts, and cashews. However, I usually use more pecans than anything)

Preheat oven to 250 degrees. Grease the bottom of a roasting pan. In a large bowl, beat one egg white with the water until very frothy. Add the nuts and stir to coat every nut.
In another bowl, mix the sugar, salt, and cinnamon.
Pour the sugar mixture over the nuts and mix until everything is coated.
Put the nut mixture into the prepared roasting pan and place in oven.
Stir the nuts every 15 minutes until the sugar forms a "crust" over the browned nuts. It usually take approximately 1 hour for a single batch but up to 2 hours if you have doubled/tripled the batch.
Once they are done, pour them out to cool. Bag them up for delivery!

  2. thanks Erin! I find them highly addicting myself, so I try to give most of them away as gifts so I won't eat them all! Very.hard.to.do.
